Budget Friendly Recipe: Tater-tot Casserole

Servings:  6-8 

Ingredients: 

2lbs bag of frozen tater tots 

1 15oz can of enchilada sauce. 

Half of a diced onion 

1 can of tomatoes ( drained) 

2 cups of cheese ( Your choice on what kind, I used Coby and Sharp Cheddar) 

1lb hamburger meat 

4 green onion stalks for garnish 

DIRECTIONS:

Preheat oven to 350

Cook hamburger meat and onion together until meat is fully cooked and onion is tender. 

Spray baking dish with cooking spray

Layer half of the tater tots on bottom of dish, add cooked meat, tomatoes and can of enchilada sauce. 

Add the rest of the tater tots on top of this layer and add the 2 cups of cheese on top. 

Put in oven for about 45 minutes! Garnish with green onions.
