Budget Friendly Recipe: Southwest Chicken Skillet

Southwest Chicken Skillet 
Serves 4-6

Prep Time: 20 minutes
Cooke Time: 50 minutes

Ingredients:
  • 1 cup uncooked long grain white rice 
  • 1 cup salsa 
  • 2 cups precooked chicken 
  • 1 (15oz) can of black beans 
  • 1 TBSP of chili powder 
  • 2 cups of chicken broth 
  • 1 1/2 cups of shredded cheese
  • 2-3 green onions, sliced for garnish. 
Instructions:
  • precook your chicken with seasoning to your liking 
  • In skillet combine precooked chicken, salsa, rice, chili powder, and chicken broth
  • Stir until mixed evenly
  • Cover and turn on high heat until rolling boil has occurred
  • Immediately turn down to low, stir and recover for 30 minutes
  • After 30 minutes, turn off heat and fluff with fork 
  • Add shredded cheese to the top and place lid back on and wait 3 minutes or until cheese is melted. 
  • Serve with green onions on top. 

This was a big hit in our house.  So yummy and budget friendly!
